The Minneapolis-St. Paul Star Tribune has an article on hunting poodles used to flush and retrieve pheasants. You can use a standard poodle in exactly the same way you use a golden or Lab. And the poodle is a very clever dog, easily trained and biddable.
Poodles are among the oldest forms of retriever. They were developed in Germany, not France. France is the home of the even older variety of water retriever called the Barbet.
Poodle comes from the Low German word Pudeln, meaning to splash.
The ancestral water dog of Britain was called the English rough water dog, and it was of a poodle type. Shakespeare referred to it as the “water rug.” This breed was crossed with spaniels, creating the water spaniels. The water spaniels were then crossed with setters, collies, and St. John’s water dogs to created the retrievers.
George Stubbs painted a water spaniel that had really strong features of the old type water dog:

Today, we would probably mistake it for a parti-colored poodle.

HAVE POODLES BEEN USED AS POINTING DOGS FOR GROUSE AND WOODCOCK???
As flushing dogs, they do fine for both. However, woodcock are hard to shoot with flushing dogs of any breed. Woodcock are zig-zag fliers and are wicked fast.
I don’t think poodles have the pointing motor pattern. The Germans have created a pointer with some of the poodle’s water abilities called a “Pudelpointer.” But it’s more like a Drahthaar than a poodle.
