It looks to me that every one of these adaptations can be explained by evolution.
I don’t know if any of the green woodpecker is an ant specialist. It has a different tongue because it eats an insect that is found deep, deep down in the bark of trees. You can get interesting adaptations from just about any animal. If green woodpeckers were designed, wouldn’t they have a much longer bill to hold that tongue, instead of rerouting it behind the head?
Examples of bad design or inefficient design are actually good cases for evolution, not for creationism.

No. If you’re unable to explain it, the default position is not to declare that God did it. If the scientific method worked like this, the very first scientist would declare everything she couldn’t explain as “God,” and then the process would stop.
Only Religion works like this. Science is perfectly happy telling people “we don’t know yet.” Plus, my guess is that issues like the tongue aren’t really unknown or not, it’s just Mr. Preacher on the video saying that “science has no explanation….” and assuming ignorance that is not the case.
